Slow Moment honey from coastal meadows, bogs and forest 500 g is harvested from the Kastna Peninsula, the forests of Jäärumetsa, and the bogs of Tõhela and Nätsi-Võlla in Pärnumaa County. Spring honey is lighter, mainly collected from maple, willow, dandelion, alder buckthorn, and fruit trees. Summer honey is darker, sourced mainly from clover, blueberry, cranberry, raspberry plants, and meadowsweet.

Honey in the jar can come in three consistencies, and you can choose your preference: liquid, crystallized, or creamy. Liquid honey is fresh from extraction or melted for packaging, allowing for transfer from larger storage containers to smaller ones. Crystallization is typical for Estonian honey, generally occurring within one to three months, so if you prefer liquid honey, you should buy it in smaller quantities and consume it quickly. The rate of crystallization mainly depends on the source plants and their nectar ratios. For example, buckthorn nectar doesn’t crystallize, but since buckthorn nectar is not the sole component in typical Estonian multifloral honey, the honey containing buckthorn will eventually crystallize, albeit over a longer period. The rate of crystallization also depends on storage conditions, with honey crystallizing fastest in cool conditions. Creamy honey is achieved through slow mixing in a special honey mixing machine during crystallization, preventing the formation of large crystals while retaining the beneficial properties of honey, making it pleasantly soft and easy to use.

Honey is always available from the self-service hive located at the entrance to Tormikadaka farm. Honey can also be ordered to a self-service hive in Nõmme, Tallinn, from September to May. Delivery within Tallinn and the Tõstamaa subdistrict is free for orders over 25 euros. For other parts of Estonia, honey is sent to parcel machines, thus adding a shipping cost to the price of honey.
